These are complex processes for which there are few available scientific studies. This article covers the origin, manufacturing, characteristics, and consumption of traditional\u00a0<a href=\"https:\/\/www.sciencedirect.com\/topics\/food-science\/fermented-fish\">fermented fish<\/a>\u00a0products, including\u00a0<em>sour herring<\/em>\u00a0from Sweden,\u00a0<em>rakfisk<\/em>\u00a0from Norway,\u00a0<em>shark<\/em>\u00a0from Iceland, and the barrel-salted herring that was
