Nýting og efnainnihald grásleppu / Utilization and composition of lumpfish

Niðurstöður sem eru birtar í þessari skýrslu eru hluti verkefnisins Bætt nýting hrognkelsafurða. Á vertíðinni 2011 voru tekin sýni af grásleppu sem veidd var í Húnaflóa, Skagafirði og Skjálfanda. Einnig voru fengin sýni af slægðri grásleppu frá tveimur fyrirtækjum. Grásleppan var skorin í fimm hluta og einstakir hlutar voru vegnir. Flakanýting var að meðaltali 14% af heildarþyngd, hrogn voru 30%, lifur 3%, hryggur 6%, slóg 6% og hvelja ásamt haus og sporði 40%. Grásleppuflök voru fiturík (8‐18 g/100g) en lág í próteinum (8‐9 g/100g). Hveljan var aftur á móti fitulítil. Hrogn voru sérstaklega selenrík en þungmálmarnir kvikasilfur, kadmín og blý voru ekki mælanlegir.  

Results in this report are a part of the project Increasing utilization of lumpfish. Sampling was carried out in March to June 2011 in Húnaflói, Skagafjörður and Skjálfandi. Samples were also obtained from two companies. The lumpfish were cut into five parts and the parts were weighed. Fillets were 14% of lumpfish weight, roe were 30%, liver 3%, spine 6%, viscera 6% and skin together with head and tail 40%. Fillets were rich in fat (8‐18 g/100g) but low in proteins (8‐9 g/100g). The skin was however low in fat. Roe were very rich in selenium but the heavy metals mercury, cadmium and lead were below the quantification limits.
