The aim of the project is to develop processes and products that contain a unique source of biologically active vitamin B12, fulfilling increasing demand from consumers moving towards plant-based diet.
This will be achieved by 1) establishing a sustainable full-scale LED-powered organic and conventional production of spirulina (microalgae) that is high in e.g. active vitamin B12, iron, and protein: Icelandic UltraSpirulina (IUS) and 2) by formulating IUS based ingredients through innovative process design. The project will as well include development of prototypes of functional foods targeted to athletes, specifically drinks, frozen functional food, and bars, which are enriched with IUS and thus able to obtain nutritional and/or functional claims of high B12 vitamin, protein and/or iron composition.
VAXA Technologies utilizes carbon dioxide, electricity, and hot and cold wastewater streams from the Hellisheiði Geothermal Power Plant to cultivate spirulina. VAXA's spirulina cultivation is therefore not only environmentally friendly, but it also has a negative carbon footprint.
