This report summarises the results obtained in 2018 for the screening of various undesirable substances in the edible part of Icelandic marine catches.

The main aim of this project is to gather data and evaluate the status of Icelandic seafood products in terms of undesirable substances and to utilise the data to estimate the exposure of consumers to these substances from Icelandic seafood and risks related to public health. The surveillance program began in 2003 and was carried out for ten consecutive years before it was interrupted. The project was revived in March 2017 to fill in gaps of knowledge regarding the level of undesirable substances in economically important marine catches for Icelandic export. Due to financial limitations the surveillance now only covers screening for undesirable substances in the edible portion of marine catches for human consumption and not feed or feed components. The limited financial resources have also required the analysis of PAHs, PBDEs and PFCs to be excluded from the surveillance, providing somewhat more limited information than in 2013. However, it is considered a long-term project where extension and revision is constantly necessary.

In general, the results obtained in 2018 were in agreement with previous results on undesirable substances in the edible part of marine catches obtained in the monitoring years 2003 to 2012 and 2017.

In this report from the surveillance programme, the maximum levels for dioxins, dioxin-like PCBs and non-dioxin-like PCBs in foodstuffs (Regulation No 1259/2011) were used to evaluate how Icelandic seafood products measure up to limits currently in effect.

The results show that in regard to the maximum levels set in the regulation, the edible parts of Icelandic seafood products contain negligible amounts of dioxins, dioxin like and non-dioxin-like PCBs. In fact, all samples of seafood analysed in 2018 were below EC maximum levels.

Furthermore, the concentration of ICES6-PCBs was found to be low in the edible part of the marine catches, compared to the maximum limits set by the EU (Commission Regulation 1259/2011).

The results showed that the concentrations of heavy metals, e.g. cadmium (Cd), lead (Pb) and mercury (Hg) in the edible part of marine catches were always well below the maximum limits set by the EU.

Í þessari skýrslu eru teknar saman niðurstöður vöktunar á óæskilegum efnum í ætum hluta sjávarfangs 2017. Vöktunin hófst árið 2003 fyrir tilstuðlan þáverandi Sjávarútvegsráðuneytis, núverandi Atvinnuvega- og nýsköpunar-ráðneytisins, og sá Matís ohf. um að safna gögnum og útgáfu á skýrslum vegna þessarar kerfisbundnu vöktunar á tímabilinu 2003-2012. Undanfarin ár hefur skort fjármagn til að halda áfram vinnu við þetta vöktunarverkefni og því var gert hlé á þessari mikilvægu gagnasöfnun sem og útgáfu niðurstaðna á tímabilinu 2013- 2016. Verkefnið hófst aftur í mars 2017 en vegna fjárskorts nær það nú eingöngu yfir vöktun á óæskilegum efnum í ætum hluta sjávarfangs úr auðlindinni sem ætlað er til manneldis, en ekki fiskimjöl og lýsi fyrir fóður. Af sömu ástæðu voru ekki gerðar efnagreiningar á PAH, PBDE og PFC efnum í þetta sinn. Markmiðið með verkefninu er að sýna fram á stöðu íslenskra sjávarafurða m.t.t. öryggi og heilnæmis og nýta gögnin við gerð áhættumats á matvælum til að tryggja hagsmuni neytenda og lýðheilsu. Verkefnið byggir upp þekkingargrunn um magn óæskilegra efna í efnahagslega mikilvægum tegundum og sjávarafurðum, það er skilgreint sem langtímaverkefni þar sem eftirlit og endurskoðun er stöðugt nauðsynlegt. Almennt voru niðurstöðurnar sem fengust 2017 í samræmi við fyrri niðurstöður frá árunum 2003 til 2012. Niðurstöðurnar sýndu að íslenskar sjávarafurðir innihalda óverulegt magn þrávirkra lífrænna efna s.s. díoxín, PCB og varnarefni. Hámarksgildi ESB fyrir díoxín og díoxínlík PCB (DL-PCB) í matvælum og fóðri voru lækkuð 1. janúar 2012 (ESB reglugerð nr. 1259/2011) ásamt því að hámarksgildi voru í fyrsta sinn sett fyrir „ekki díoxínlík“ PCB (NDL-PCB). Nýju hámarksgildin eru notuð í þessari skýrslu til að meta hvernig íslenskar sjávarafurðir standast kröfur ESB. Niðurstöður ársins 2017 sýna að þrátt fyrir breytingu á hámarksgildum fyrir díoxín, DL-PCB og NDL-PCB eru öll sýni af sjávarafurðum til manneldis undir hámarksgildum ESB fyrir þrávirk lífræn efni og þungmálma. Þá reyndist styrkur svokallaðra ICES6-PCB efna vera lágur í ætum hluta fisks, miðað við ný hámarksgildi ESB. Sömuleiðis sýndu niðurstöðurnar að styrkur þungmálma, t.d. kadmíum (Cd), blý (Pb) og kvikasilfur (Hg) í íslenskum sjávarafurðum var alltaf undir hámarksgildum ESB.

As of January 1st 2012 Commission Regulation No 1259/2011, regarding maximum levels for dioxins, dioxin-like PCBs and non-dioxin-like PCBs in foodstuff came into force. This amendment to the existing regulation (No 1881/2006) resulted in changes in maximum levels for dioxins and dioxin-like PCBs for many food products due to changes in toxicological assessment of dioxins. Furthermore, maximum levels for non-dioxin-like PCBs have now been established in foodstuffs. In this report, we use these revised maximum levels for dioxins, dioxin-like PCBs and nondioxin-like PCBs in foodstuffs to evaluate how Icelandic seafood products measure up to limits currently in effect. The results obtained year 2017 reveal that all samples of seafood for human consumption were below EC maximum levels for POPs and heavy metals. Furthermore, the concentration of ICES6-PCBs was found to be low in the edible part of fish muscle, compared to the maximum limits set by the EU (Commission Regulation 1259/2011). The results showed that the concentrations of heavy metals, e.g. cadmium (Cd), lead (Pb) and mercury (Hg) in Icelandic seafood products was always well below the maximum limits set by EU.

Undesirable substances in seafood products – results from the Icelandic marine monitoring activities in the   year 2012

Í þessari skýrslu eru teknar saman niðurstöður vöktunar á  óæskilegum efnum í sjávarfangi, fiskimjöli og lýsi fyrir fóður frá árinu 2012. Hámarksgildi ESB fyrir díoxín og díoxínlík PCB (DL‐PCB) í matvælum og fóðri voru nýlega lækkuð ásamt því að hámarksgildi voru í fyrsta sinn sett fyrir „ekki díoxínlík“ PCB (NDL‐PCB). Nýju hámarksgildin eru notuð í þessari skýrslu til að meta hvernig íslenskar sjávarafurðir standast kröfur ESB. Vöktunin hófst árið 2003 fyrir tilstuðlan þáverandi Sjávarútvegsráðuneytis, núverandi Atvinnuvega‐  og nýsköpunar‐ ráðneytis, og hefur nú verið framkvæmt í tíu ár samfleytt. Verkefnið byggir upp þekkingargrunn um magn óæskilegra efna í efnahagslega mikilvægum tegundum og sjávarafurðum, það er skilgreint sem langtímaverkefni þar sem eftirlit og endurskoðun eru stöðugt nauðsynleg. Árið 2012 var áhersla lögð á að safna saman upplýsingum um lífrænu efnasamböndin PFC og ólífræn snefilefni í ætum hluta sjávarfangs, en einnig í fiskimjöli og lýsi fyrir fóður. Almennt voru niðurstöðurnar sem fengust 2012 í samræmi við fyrri niðurstöður frá árunum 2003 til 2011. Niðurstöðurnar sýndu að íslenskar sjávarafurðir innihalda óverulegt magn þrávirkra lífrænna efna s.s. díoxín, PCB, varnarefni og PBDE. Þetta var annað árið sem PFC eru greind í íslenskum sjávarafurðum og perfluorooctane sulfon amide (PFOSA) var eina PFC efnið sem var yfir greiningarmörkum, önnur PFC efni mældust ekki. Niðurstöðurnar frá árinu 2012 sýndu að þrátt fyrir breytingu á hámarksgildum   fyrir díoxín, DL‐PCB og NDL‐PCB (ESB reglugerð nr. 1259/2011) eru öll sýni af sjávarafurðum til manneldis undir hámarksgildum ESB fyrir þrávirk lífræn efni og þungmálma. Þá reyndist styrkur viðmiðunar‐PCB efna (marker PCBs) vera í lágmarki í ætum hluta fisks, miðað við ný hámarksgildi ESB. Sömuleiðis sýndu niðurstöðurnar að styrkur þungmálma, t.d. kadmíum (Cd), blý (Pb) og kvikasilfur (Hg) í íslenskum sjávarafurðum var alltaf undir hámarksgildum ESB. Í mars 2012 tók gildi ESB reglugerð nr 277/2012 þar sem hámarksgildi fyrir díoxín og DL‐PCB í fóðri voru lækkuð, en einnig voru sett hámarksgildi fyrir NDL‐ PCB. Þrátt fyrir þessa breytingu voru öll sýni af fiskimjöli og lýsi fyrir fóður sem voru mæld undir hámarksgildum, fyrir utan eitt kolmunnamjölssýni sem innihélt toxafen yfir hámarksgildum ESB.

This report summarises the results obtained in 2012 for the screening of various undesirable substances in the edible part of marine catches, fish meal and fish oil for feed. The newly established maximum levels for dioxins, dioxin‐like PCB and non dioxin‐like PCB in foodstuffs and animal feed are used to evaluate how Icelandic seafood products measure up to EC limits currently in effect. The surveillance program began in 2003 and has now been carried out for ten consecutive years. The project fills in gaps of knowledge regarding the level of undesirable substances in economically important marine catches for Icelandic export. It is considered to be a long‐term project where extension and revision are constantly necessary.   In the year 2012 emphasis was laid on gathering information on the organic compounds PFCs and inorganic trace elements in the edible part of marine catches as well as in the fish meal and fish oil for feed. Generally, the results obtained in 2012 are in agreement with previous results from the years 2003 to 2011. The results show that the Icelandic seafood products contain negligible amounts of persistent organic pollutants (POPs) such as dioxins, dioxin like PCBs, pesticides and PBDEs. This is the second time PFCs are analysed in Icelandic seafood and fish products and the results show that the main PFC compound, perfluorooctane sulfone amide (PFOSA) was the only congener detected. The results obtained in the year 2012 reveal that despite of the recent change by the EC in maximum levels for dioxins, dioxin‐like PCB and non dioxin‐like PCB in foodstuffs, all samples of seafood for human consumption were below EC maximum levels for POPs and heavy metals. Furthermore, the concentration of marker PCBs was found to be low in the edible part of fish muscle, compared to the maximum limits set by the EU (Commission Regulation 1259/2011). The results showed that the concentrations of heavy metals, e.g. cadmium (Cd), lead (Pb) and mercury (Hg) in Icelandic seafood products was always well below the maximum limits set by EU.   In March 2012 Commission Regulation No 277/2012, regarding maximum levels for dioxins and PCB in animal feed came into effect and after the implementation of this regulation maximum levels are now also set for non dioxin‐like PCB. Despite of this change all samples of fish meal and fish oil for feed measured were below the EC maximum limits for feed components of marine origin except for one blue whiting meal sample that exceeds the maximum limits for toxaphene.

Gæðakræklingur er gulls ígildi  / Icelandic blue mussels – A valuable high quality product

Til þess að íslensk kræklingarækt geti vaxið og dafnað er mikilvægt að framkvæma grunnrannsóknir varðandi öryggi og gæði á ferskum íslenskum kræklingi sem geta nýst framleiðendum við markaðssetningu og sölu afurðanna. Tilgangurinn með þessu átján mánaða langa rannsóknarverkefni var að safna upplýsingum um öryggi og gæði kræklings (Mytilus edulis) í markaðsstærð (> 45 mm) sem ræktaður er við strendur Íslands. Samtals var þrettán kræklingasýnum í markaðsstærð safnað á fjórum mismunandi ræktunarstöðum við landið (Hvalfirði, Breiðafirði, Álftafirði og Eyjafirði) á mismunandi árstímum. Kræklingur í markaðstærð fékkst ekki á Eskifirði og þessi ræktunarstaður var því útilokaður frá verkefninu. Í staðinn voru tekin sýni oftar á hinum ræktunarstöðunum fjórum en upphaflega var ráðgert. Kræklingi var safnað af ræktunarlínum og tími og staðsetning skráð. Þyngd, lengd og holdfylling var mæld. Kræklingurinn var kyngreindur og kynþroskastig áætlað í hverju sýni. Í þessu verkefni var safnað umtalsverðum upplýsingum um næringarefnainnihald (prótein, vatn, fita, aska) auk lífvirkra efna s.s. selens, sinks, karótíníða og fitusýrusamsetningar í kræklingi frá mismunandi ræktunarstöðum og á mismunandi árstímum. Sömuleiðis voru mæld óæskileg ólífræn snefilefni (blý, kvikasilfur, kadmíum, kopar, nikkel, arsen, króm og silfur) í öllum sýnum. Einnig var unnið að því setja upp og prófa hraðvirkrar mæliaðferðir til að mæla þrjár tegundir þörungaeiturs þ.e.a.s. ASP, PSP og DSP. Mæliaðferðirnar voru bestaðar gagnvart þeim tækjabúnaði sem til staðar er hjá Matís og einnig mæld viðmiðunarsýni (þ.e. kræklingur með þekktu magni þörungaeiturs) til að meta gæði mælinganna. Prófuð voru tvenns konar hraðvirk próf sem til eru á markaði til þess að meta hvernig þau reynast við þörungaeitursmælingar í kræklingi.    Annars vegar voru prófuð svokölluð Jellet próf og hins vegar ELISA próf.   Niðurstaðan er sú að bæði prófin eru tiltölulega einföld í notkun, hins vegar er nauðsynlegt er að prófa þau á aðeins fleiri sýnum, en gert var hér, til að leggja betra mat á það hvernig best væri að nýta þau í gæðaeftirliti með kræklingarækt. Nauðsynlegt er að gera sér grein fyrir takmörkunum þessara hraðvirku prófana þar sem þau munu ekki koma algerlega í staðinn fyrir mælingar með viðurkenndum rannsóknaraðferðum. Þessar prófanir, gætu aftur á móti, fækkað þeim sýnum verulega sem send eru til viðurkenndra mælinga, þar sem ekki væru send sýni þegar forprófanirnar sýna að þörungaeitur er til staðar og ekki fengist leyfi til að uppskera krækling. Niðurstöðurnar benda til þess að íslenskur kræklingur hafi ákjósanlega næringarefnasamsetningu sem þó er háð náttúrlegum árstíðabreytingum. Fjölbreytagreining (PCA) sýnir að kræklingur inniheldur hærra hlutfall af fitu og próteini á vorin (maí og júní) líklega vegna þess að kræklingurinn er að undirbúa hrygningu á þessum árstíma. Snemma að hausti minnkar hlutfall próteins á meðan magn óþekktra efna eykst. Á þessum árstíma er hrygningu að ljúka, ef ekki lokið. Greiningin sýnir einnig veika jákvæða fylgni milli próteins og fitu, en sterka neikvæða fylgni milli próteins og óþekktra efna. Styrkur þungmálma (kvikasilfurs, blý, kadmíums) var almennt lágur, en í nokkrum tilvikum var styrkur kadmíums þó hærri en leyfilegt er samkvæmt íslenskum og Evrópusambands reglugerðum (1 mg/kg). Mikilvægt er því að fylgjast með styrk kadmíums í íslenskum kræklingi áður en hann fer á markað. Niðurstöður fitusýrugreininga sýna að íslenskur kræklingur inniheldur umtalsvert magn af omega‐3 fitusýrunum EPA (C20:5n3) og DHA (C22:6n3) auk Palmitoleate (C16:1n7), sem allar eru þekktar fyrir jákvæð áhrif á heilsu. Niðurstöður verkefnisins sýna að íslenskur kræklingur er samkeppnishæfur varðandi næringarefna samsetningu og inniheldur auk þess jákvæð lífvirk efni. Þessar niðurstöður munu tvímælalaust nýtast kræklingaræktendum við markaðskynningar og skipulagningu varðandi uppskeru og sölu kræklingsafurða.

In order to enable the Icelandic blue mussel industry to grow, market and sell their product, there is a critical need to perform some fundamental studies.   The purpose of this eighteen months long research project was to investigate the quality and value of Icelandic blue mussels (Mytilus edulis) grown at different growing sites of Iceland. A total of 13 samples were collected from blue mussel culture sites around Iceland (Hvalfjörður, Breiðifjörður, Álftafjörður and Eyjafjörður). The Eskifjördur sampling site was excluded from the project due to the lack of market sized blue mussels and resulted in sampling from growing lines of four different culture sites. The mussels were characterised according to location, time of year, weight, length, meat yield and reproductive status. This report summarises the considerable amounts of data obtained regarding the chemical composition of Icelandic blue mussels, including trace metals (lead, cadmium, copper, zinc, mercury, arsenic, selenium, chrome, nickel and silver), nutrients (moisture, protein, lipid and ash content) and  bioactive components (carotenoids and fatty acid profile). In addition, the presence of common algal toxins in blue mussels was investigated and concluded that further work will be needed to optimise the rapid assays tested for measuring algal toxins i.e. PSP and DSP toxins.  The results obtained need to be further verified by using standard addition procedures or with certified reference material. It is important to keep in mind that these rapid tests for PSP and DSP only provide screening results. Further testing with reference analytical methods will be required to confirm the results from these rapid tests before the mussels are harvested and sold on market. The rapid tests are suitable for quality control and decision making regarding whether or not it is safe to harvest the mussel crop or if the mussels should be harvested later after purification in the ocean.   The results obtained here indicate that Icelandic blue mussels compose well balanced nutritional and trace element levels. A moderate seasonal variation pattern was observed in all measured nutritional parameters. A principal component analysis (PCA) showed that mussels contained higher proportion of fat and protein during spring (May‐June).  In the autumn the proportion of protein reduced while the proportion of other unknown substances increased. The PCA analysis also revealed a weak positive correlation between protein and fat and a strong negative correlation between protein and other unknown substances. Heavy metal concentrations were generally low.    However, elevated levels of cadmium were measured in mussel samples from certain culture sites, which in some cases exceeded the maximum EU limits (1 mg/kg) for cadmium in bivalve molluscs. The fatty acid profile revealed significant levels of omega‐3 polyunsaturated fatty acids such as Eicosapentaenoic (EPA, C20:5n3) and Docosahexaenoic (DHA, C22:6n3) as well as Palmitoleate (C16:1n7), all recognised for their health beneficial effects. This fundamental information proves that Icelandic blue mussels is a market competitive product of high quality and will greatly aid in developing the Icelandic mussel industry and in making the best choices considering growing, harvesting , marketing and selling their products.
