Researchers at Matís and the University of Groningen in the Netherlands have for years studied enzymes that convert beta-glucan polysaccharides and oligosaccharides, and were the first to describe the activity of such enzymes.
The aim of the project was to increase knowledge of the properties of these enzymes and to investigate the relationship between structure and function. The image structure of the enzymes was studied and a detailed analysis was made of the activity of the enzymes and the production of images. Key amino acids in catalytic reactions were also modified to define the reaction pathway.
The ultimate goal was to develop an enzyme toolbox for the transformation and production of complex beta-glucan polysaccharides and oligosaccharides. Such sugars have great utilization potential in various fields.
