The project aims to develop an industrial process that allows for protein extraction from macroalgae. The process will be based on the use of enzymes that were recently identified and characterized by researchers at Matís – enzymes that catalyze the breakdown of seaweed polysaccharides.

Comparable enzymes are generally not commercially available and are scarcely described in the scientific literature, which represents an opportunity for innovation. In the project, we will develop a method wherein macroalgal biomass is ‘digested’ with the enzymes to facilitate protein extraction. The resulting protein-product is intended for use as an ingredient in foods. It might for example be sold as a protein-powder, or used as an ingredient in protein-drinks, energy or sports-bars, etc.
