Project description:
The aim of the project is to study the bioactivity of sidestreams from marine-related processing, ie the processing of pelagic fish and seaweed meal and to evaluate their use in product development for human consumption. Several prototypes of potential products for human consumption will be developed and studied, including extracts from seaweed, redfish oil and protein products from pelagic fish processing. This will be done by looking at their bioactivity properties, including antioxidant activity, anti-inflammatory and other bioactivity properties that are considered appropriate for each prototype. In addition, both bioactivity and bioavailability will be examined on selected cell models to further evaluate their use in human nutrition.
