The project was intended to consolidate information on pork in the Icelandic Meat Book and the Icelandic Database of Nutritional Values (ÍSGEM), both of which are widely used sources of information on the Matís website. The project started in 2020 and ended in early 2021. The sponsor was the Agricultural Productivity Fund.
In the report of the project ( Pork - Data for disclosure - Matís (matis.is) ) you can find information on the division of pork into meat, pulp and bone, together with the necessary information for nutrition labelling. Measurements were made of energy substances, fatty acids and selected vitamins. The proportion of polyunsaturated fatty acids was high in the meat and it turned out to be an excellent source of vitamin B1 and a good source of vitamin B12.
