The aim of the project is to develop a new Icelandic premium product that unites premium Icelandic Bacalao, refined design, and the rich history of Icelandic saltfish curing. The project will produce two product formats: a food souvenir targeting tourists visiting Iceland, and premium conservas aimed at speciality food markets abroad.
The project is led by F-61, which builds on its experience developing the gift product "Síldarævintýrið" (e. The Herring Adventure), which has achieved strong national distribution and successfully introduced Iceland's herring heritage to visitors. The project also draws on results from the Nordic project Saltfiskkræsingar (https://matis.is/matis_projects/trendy-cod-saltfiskkraesingar/e. Trendy Cod), taking the next step by transferring recipes and knowledge into standardised, industry-ready production of an export-quality canned product. The goal is to create a new product category for Icelandic Bacalao, adding value through full processing and targeted market adaptation.
The project is a collaboration of F-61 s/f, Matís ohf, Íslenskir saltfiskframleiðendur and Ajtel Iceland ehf, combining research expertise, product development, manufacturing capability and market knowledge, creating a strong foundation for a new Icelandic export product.
