Gróðrarstóðin Ártangi is the owner of the project and has agreed with Matís on consulting, measurements and product development. The aim is to produce commercial products from herbs for use in the food industry in order to achieve an acceptable shelf life without traditional preservatives. Herbs possess beneficial properties such as antioxidant activity. Consumers are increasingly interested in foods with natural ingredients instead of artificial additives. It is expected that the food industry will see an opportunity in using preservatives made from herbs instead of traditional preservatives and thus meet the wishes of consumers.
